Κοτόπουλο Γιάχνι ή Γιαχνί Αυγολέμονο Πελοποννήσου/Chicken with white sauce-egg lemon -Peloponnese

Welcome to 💞 Stella Love Cook 💞 this summer I visited Poros – A Perfect – Amazing – Beautiful island of the Peloponnese There I met with the Ms. Virtue – told me a perfect and amazing recipe – As he said he is a forgotten chicken with white sauce – A food that – you will lick your fingers – Let’s go see it The first thing to do is to put a pot of water and boil it / We need=5 large dried onions (sliced) Cut our onion in the middle – and cut the slices We cut all our onions and now we will do the following : The water boils – Add the onions / We want to boil for 2-3 minutes – No more When boiling our onions take on all the bitter taste of onions and become too sweet / look within three minutes the water boils – and now we turn off the fire Remove the onions in a colander – cool the onions with cold and plenty of water – and let them drain too well 1 commercial chicken 1,200 to 1,5 kg / 1 cup extra virgin olive oil (200 grams) – 1 teaspoon of salt – 1/8 teaspoon of black pepper – 1/8 teaspoon oregano (optional) I tried the recipe both with oregano and without oregano /Since my opinion on this food is that oregano fits / choose how you want to make your recipe (With oregano or no oregano) Add olive oil to the pressure cooke – Put the olive oil on fire because we want to sauté the chicken – Don’t make the mistake of adding chicken as long as the olive oil is cold/ because very simply the chicken will stick to our kettle or saucepan Oyez! This is the sound that must be heard When we put the chicken in the olive oil – means that the olive oil is ready – Once we put the chicken in hot olive oil / and yet we shake our chicken – this means that our olive oil is hot When sautéing we want very strong fire /we want to shield the chicken – we want to crust in the chicken – we finished with all the chicken In this olive oil sauté our onions – Stir constantly, do not let our onions stick – sauté in high temperature Stir – better with a wooden spoon / Look what I’m doing! Scrape the bottom of the pot – There is the deliciousness of chicken -this way our food will become viscous but also sweet Look how beautiful our onions are . Now we are adding our spices! This will make our onions even sweeter. Mix well ! will take out our onions all the sugar they have. **Put in a saucepan of water to boil to add to the food. Our onions are ready . That’s how we want onions. That’s how we want onions – additionally Add this broth that has eliminated the chicken / mix well – the materials go everywhere – we want all the delicacies of chicken to go everywhere Our food will be Perfect – Great and with excellent taste / Now we will add the hot water Look at our water before It was hot so now our food has not stopped boiling / I’ll boil my food in a pressure cooker – I won’t add much water / If you boil in saucepan – You will cover the chicken with water – and If you need extra water you will add cover the pressure cooker and boil for 5 minutes – and then we will turn off the fire – If more boiling is needed – we will continue boiling – without the help of a pressure cooker (Refer to my channel and see : (How do I use the pressure cooker ?? )) Listen up ! From the time the valve starts to blow – boil for 5 minutes ?(from that point onwards we count 5 minutes) We boiled for 5 minutes and waited almost half an hour for the lid to open – and we see that our chicken wants more boiling. Look! Add some water (and gradually add water if needed) and cover with a simple lid and continue boiling lower the temperature and continue boiling for another 15 to 20 minutes / our food is ready / Boil it for 2-3 minutes without lid to make a thick sauce and to become perfect and amazing / and now we will do the following : we will make – Egg and Lemon – for our food and it will be perfect / turn off the fire Now I need two big tablespoons of food broth Egg and Lemon: juice of 1 lemon – 1 whole egg – a pinch of salt – 2 full spoons of broth (To make the Egg and Lemon the broth has to be not too hot)If the broth is hot – then the egg will be cooked – and they will be chunks of chunks in addition we need a large bowl (plastic) and a mixer // Break the egg and open it – and separate the egg white from the yolk – we will use the yolk. Put it aside Add a pinch of salt to the egg white – and beat moderate meringue with the mixer Look! So we want our meringue – now we will add the yolk – add slowly while striking the lemon We take two forks in our hands – and we slowly add our broth Look! How nice egg and lemon we made Look! The egg is not cooked either! We made a perfect egg and lemon / now is the time to add it to our food We are ready to add egg and lemon to food that is off fire / shake the pot to warm the egg properly / go everywhere egg and lemon / So our food will become even more fabulous perfect and amazing We turn on the fire boil our food for a minute / to properly pasteurize the egg – We also get a thick sauce – our food is ready – we turn off the fire – we are ready to enjoy it Perfect – Amazing – Exceptional – Delicious – Chicken with white sauce / Friends My !
