Helloo!!! Namaskar!! I’m Veena Jan from curryworld This is my 5th video I wanted to take a moment to thank you all for the support you’ve given for my last 4 videos Let’s do a simple recipe today Its the sambar,liked by both vegetarians as well as non vegetarians Its a simple sambar recipe Later will do the sambar with roasted coconut So,Let’s go and make the sambar We need 1/2 glass of chana dal You all might be thinking that i made it wrong by saying chana dal instead of toor dal But I meant chana dal only Earlier,I’ve been using toor dal for making sambar My cousin,Sushi suggested me to cook sambar with chana dal Then I tried it and I like it very much After that,I used to make sambar only with chana dal You can use toor dal also So we need 1/2 glass of chana dal/toor dal 1/4 tsp of turmeric powder These are the ingredients needed for the 1st part of sambar making 1/2 of one medium sized onion or 1 small onion A small piece of asafoetida Salt to taste So these are all for the 1st part I’ve taken 1/2 of one carrot, 4 cluster beans which gives a special taste to the sambar ( optional) 4 to 5 pieces of pumpkin. Everytime I used to add pumpkin in sambar You can add the vegetables of your choice Then I’ve taken 4 to 5 pieces of cucumber,4 to 5 pieces of elephant yam and 1 drumstick made into small pieces Plenty of curry leaves Here I’ve taken 15 shallots.If you feel difficult in cleaning shallots,5 or 6 shallots is enough But if you want to taste your sambar yummy,don’t feel lazy to clean 15 shallots Cut the 15 shallots into two 4 ladies fingers cut into small pieces 2 green chilli slits 1 medium sized tomato Soak a lemon sized tamarind in enough water and later we have to add that water into the sambar 3 or 4 dry red chilly,plenty of curry leaves,1 tsp of coriander powder, 1/2 tsp of chilly powder, and 2 pinch of fenugreek powder 2 1/2 tbsp of sambar powder,enough coconut oil,which gives the authentic taste to the sambar Asafoetida powder and water as required These are the ingredients needed to make the sambar I forgot to tell you mustard seeds.1/2 tsp of mustard seeds In a cooker add washed chana dal or toor dal,as you wish Add the vegetables along with onion and a small piece of asafoetida . Do not add ladies finger,tomato and shallots now Add water upto the 3/4th of the cooker Add 1/4 tsp of turmeric powder and salt We should boil the vegetables by adding salt before we add tamarind water into the sambar In medium flame cook this for 1 whistle In a pan add 2 tbsp of coconut oil and heat it well Add the 15 shallots and 1 clove of garlic into it I forgot to tell you garlic and jaggery when I was explaining the list of ingredients Saute the shallots and garlic till the raw small goes Add all the powders,when it become transparent This is my mother’s tip.I always follow this recipe,whenever I want to make a sambar quickly I’m less interested in making sambar with roasted coconut Its a simple recipe.Even bachelors can easily make tasty sambar with this recipe This has sauted well.Now add the powders one by one Add 1/2 tsp of chilli powder.It depends on the spice level of the chilly powder you use Me and my son love sambar which is a bit more spicy.That’s why I’ve added extra chilly powder in it Its optional only Add 1 tsp of coriander powder Saute till the raw smell goes Reduce the flame and add 2 tbsp of sambar powder.Keep the remaining 1/2 tbsp of sambar powder aside Saute till the raw smell goes A nice smell is coming out of it.Add plenty of curry leaves,fenugreek powder and asafoetida powder Always add the masala powders after reducing the flame Sambar gets the authentic taste,only if you add asafoetida powder in it.You can skip this step,if you don’t prefer this taste I love that smell and so I always used to add such powders in my sambar You can make adjustments with your choices.But this is the basic sambar recipe Add some curry leaves Transfer it into another plate and wait for the whistle from the cooker After 1 whistle take it off from the stove and immediately remove the pressure inside the cooker manually. Otherwise the vegetables will be mashed up Do not wait for the pressure settle down by itself Add the tamarind water into it Add the ladies finger,green chilly and tomato Also add the roasted shallots masala mix into the cooker Adjust the amount of sambar powder based on the sambar powder you use If the masala with you has less smell or flavor,you can add upto 3 tbsp.And also check the spice level of the sambar powder and add accordingly 2 1/2 tbsp of sambar powder is enough for me Add 1/2 tsp of jaggery and mix well.Boil it well in medium flame Boil well till 1/4th of the total gravy gets dried Then only we would get the actual taste of sambar Let it boil well Its almost 10 minutes now.Its boiling really well It has to become thick a little more.But do not make the gravy too thick.Because the consistency become thick,when it cool down. If you make sambar in the morning,the vegetables and gravy would blend really well at the time of lunch You can add the vegetables of your choice.I’ve added the vegetables which were available with me You can add both drumstick and ladies finger together.Or you can add any one among them Check the salt and make necessary changes Be careful while adding tamarind water Add tamarind water little by little.If the quantity increases,the taste of the whole sambar will be lost If you feel like the sourness is less,you can add tomato accordingly Here the sourness is perfect for me.If you do it in the same way there won’t be any problem Let it boil for some more time Its almost done.It thickens more when it cool down It was 3/4th of the cooker in the beginning.Now its only 1/2 the level of the cooker.That’s enough Let it thicken when cool down.Then only we would be able to experience the real taste Let’s do the seasoning Heat a sauce pan and add 1tbsp of coconut oil When it is hot enough,add dry red chilly,.When it is done,add mustard seeds,fenugreek seeds,plenty of curry leaves Finally add the remaining sambar powder into it in low flame Mix them well Pour it into the sambar when the raw smell goes Mix them well like this Switch off the flame and keep the cooker closed for some time After 30 minutes,we can open this cooker.By then the vegetables will be perfectly blended in the masala So the easy and tasty sambar is ready Remove the weight when you close the cooker.Otherwise,it will become overcooked because of the pressure inside the cooker This is the consistency of our sambar after 2 hours Adjust the amount of water based on you preferences Make it dry for some time,then only the actual taste will come Its a simple recipe,but requires some patience. So please do try See you all with a new recipe.Till then Thank you
