电饭锅蛋糕|Rice cooker cake
Hello everyone. Today we’re going to use rice cooker to make a cotton cake. We need 4 eggs, milk 40g, cake flour 70g, oil 40g, sugar 70g The first step is to separate egg white, and the method is fine. Add sugar 10g. Add milk 40g. Oil 40ml. Mix them well. Vanilla extract 2 or 3 drops. Sift the cake flour directly into the bowl. Fold in slowly, this will prevent flour forming gluten. It should be running after mixing. Let’s beat the egg white. Add white vinegar to help beat the egg white well. After forming, add sugar. Slowly add in sugar. Sugar will dissolve in the egg white. The sugar will be wrapped around the bubbles. It protects the bubbles from collapsing. When it has done, you will see that the meringue is very shiny. Slowly, the mixer will leave a very visible mark. Like this, it reaches the soft peak stage. You see that the tip and the bottom are all curved. Combine 1/3 of the meringue into the egg yolk. Pour the batter over to the meringue. Fold it well. Scrape from the bottom, and fold to the top. Turn the bowl after each folding motion. Get the rice cooker and butter the bottom. Now pour in the batter to the rice cooker. Shake the bowl, it will make the bubbles come out easily. Move the bowl into rice cooker and press cook button. It’ll be done after 40 mins. The cake is done! Let’s have a plate, and you can literally just flip it up. The cake is moist and light. You can have the cake with ice cream and the fruit you like. It is so soft, my mouth is watering.😋 It melts in my mouth, and it is not very heavy. I feel like I’m in heaven.
