Anti-Griddle Mexican Key Lime Semifreddo

Today using the Breville Polyscience Anti-Griddle,
I made a Mexican key lime semifreddo. I made a fresh Mexican key lime curd by juicing the
key limes and then piping them out onto the Anti-Griddle. Also there’s ginger beer “dippin dots” from
a ginger beer fluid gel as well as a ginger beer meringue. To top that off, there’s a little bit of raspberry
confetti which is frozen raspberries broken into individual cells to give the dish a little
bit more texture. And the final garnish is some fresh sorrel
foraged from the La Jolla coastline.
