Crispy Fried Egg Sandwich with Potatoes & Saffron Aioli

anyways today we are possibly making the best sandwich ever we’re talking a fried
egg sandwich with roasted potatoes and saffron aioli ladies and gentlemen this
has such an explosion of flavors so many different textures very easy to make and
done in 30 minutes you can serve this for breakfast for lunch or even dinner
it doesn’t matter when you eat it it’s gonna blow your mind now to make this
recipe make sure that you use baguette bread do not use sliced sandwich bread makes
all the difference in the world second thing I’m using some cage-free organic
eggs in my opinion there so much better than regular eggs and last but
not least make sure you some high quality saffron threads this is what’s
gonna flavor that saffron aioli to take this sandwich to the next level you
guys have seen me try a lot of different brands of saffron here on Spain on a Fork
but at the end of the day and in my opinion the saffron threads from golden
saffron are the best ones in the market you cannot beat these guys price to quality ratio
get yourself a tin of this this is amazing saffron link in the
description box below we’re gonna begin by grabbing two medium sized yukon gold potatoes
that have been washed and patted dry and cut them into rounds that
are a quarter inch thick and I like to leave the skins on the potato as it
gives them a beautiful rustic flavor once you have all your potatoes cut add them
into a baking tray lined with parchment paper and make sure they’re all in a
single layer that way they all cook evenly
now we’re gonna brush a kiss of extra-virgin olive oil on each potato and then season them with sea salt
and freshly cracked black pepper ok now I’m gonna add these potatoes into a
preheated oven bake + broil option that’s the bottom heat and the top heat 250
degrees Celsius which is about 475 degrees Fahrenheit while our potatoes are roasting in the oven
let’s make our saffron aioli I’m gonna add two cloves of garlic that I roughly minced into a mortar pinch in
half a teaspoon of saffron threads and mash down the garlic and the saffron
with a pestle until you form a paste for the next step I’m adding a half cup
of mayonnaise we are taking the mayonnaise shortcut here to make this
aioli makes it so much easier but the flavors are still incredible
then squeeze in one teaspoon of fresh lemon juice add in one tablespoon of extra
virgin olive oil and season with sea salt and freshly cracked black pepper
and we’re gonna whisk this together until everything is well combined and as you can see look how quickly this
comes together and guys again the flavors here are out-of-this-world good
once it’s well mixed I’m gonna cover it with some saran wrap and set it aside
for the next step let’s fry up our egg I’m gonna grab a fry pan heat it with a
medium-high heat and add in 1/4 cup of extra virgin olive oil before we start
frying our eggs I like to crack each one into an individual bowl this ensures
that the egg yolk will not break when I add it into the pan and also that
there’s no egg shells in there after heating our extra virgin olive oil on a
medium-high heat for 2 minutes I’m gonna add in one the eggs in there I like to
cook these in batches to not overcrowd the pan now the secret when you are
cooking a Spanish egg is you don’t want to flip it otherwise that egg yolk is gonna cook through
and it’s not going to be nice and creamy what we’re gonna do here
is we´re not even gonna be using a spatula you just want to tilt the pan and let that hot olive oil run all over the egg especially through
the egg whites that way they cook through and the egg yolks stay nice and creamy
about a minute and a half after we added the egg in there you can
see it’s got a nice crispy edge on the outside the egg whites are done and those
egg yolks are still nice and creamy I´m gonna go ahead and remove the egg from
the pan make sure to shake off any of that excess oil and transfer it to a dish and continue to cook your eggs in this
exact same method and as you’re finishing up your fried eggs make sure
you season each one with some sea salt and freshly cracked black pepper
20 minutes after adding the roasted potatoes into the oven let’s go ahead
and take them out these look perfectly cooked okay we have all our ingredients ready let’s start assembling our sandwiches I’ve got this
baguette here I’m gonna cut it into three pieces each one’s gonna be about
five inches long cut each piece open in half add a generous portion of the
saffron aioli in the bottom part of the bread add in a couple roasted potatoes
and a crispy fried egg and I’m gonna sprinkle it with some fresh chives this just
gives this sandwich a beautiful pop of freshness okay guys our sandwiches are done seriously how insanely delicious do these look I’m gonna cut one of them open
that way you guys can see what they look like inside and
give it a try seriously guys have you ever seen anything like this
before this looks amazing here we go wow that is beyond delicious that
saffron aioli is so good you guys saw we took the mayonnaise shortcut incredible
flavors those potatoes add a nice texture and then the perfectly fried egg
everything combined together it’s an explosion of flavor serve this for
breakfast lunch or dinner easy to make done in about 30 minutes before I go I’d
