Easy Chicken Dum Biryani Recipe | Hyderabadi Chicken Dum Biryani

this a traditional recipe from the Hyderabadi cuisine. dum means steam cooked in a sealed container on low flame, an ancient slow cooking method these are the ingredients we need. the quantities & method are given in the description box. do not get overwhelmed by the number of ingredients. dum biryani is really very simple to prepare as you will see when it is prepared basmati rice soaked in water. soak for 30 minutes prior to cooking chicken with bone yogurt fried, browned/caramelized, sliced onions desi ghee/clarified butter mint leaves cilantro garlic paste ginger paste whole spices – green cardamon, black cardamom, cloves, peppercorns & cinnamon garam masala turmeric powder coriander powder red chilli powder salt shah jeera green cardamom powder milk to which a pinch of saffron has been added and warmed so that the saffron releases its color & flavor kewra essence. add rose water as well. we did not have it hence not added we will marinate the chicken first to a wok add the chicken, ginger garlic pastes, desi ghee, salt, garam masala, turmeric powder,, coriander powder, red chilli powder, cardamom powder, yogurt, browned onions, mint & cilantro the ingredients & their quantities for each step are given under separate heads. add according to this after adding all the ingredients mix well by hand till they combine really well we have added a little more salt. once mixed check the salt & add if needed the ingredients are well mixed. cover & let the chicken marinate for 30 minutes while the chicken marinates let us boil the rice keep a pan on medium heat. add water, salt & shah jeera and let the water come to a boil the rice has to be only 75% cooked so be careful while boiling it & lightly stir a few times while it is boiling so it cooks evenly while the water comes to a boil we will make the spice potli with the whole spices put in all the whole spices & tie it into a knot then hammer it lightly to break it. this will help release their aroma quickly the water has started to boil. add the shah jeera, spice potli, salt & soaked rice minus the water mix well and let the water come to a rolling boil remember we will not cook the rice completely but only 75% the water has come to a rolling boil. reduce heat to low and cook the rice till 75% done. ensure you lightly stir the rice a few times in between so that it cooks evenly after about 6-7 minutes our rice is done put off the heat & strain out the rice. remove the spice potli ensure the water drains out. lightly stir the rice to prevent breaking the chicken is marinated as well so we will start layering the biryani ingredients spread half the rice over the marinated chicken spread half the browned onions the cilantro the mint the cardamom powder the saffron milk and kewra essence put it the remaining rice & spread it evenly add the remaining browned onions & 1 tbsp clarified butter seal the kadhai/wok with wheat flour dough thoroughly as shown a layer on the kadhai/wok rim & press the lid on it firmly then another layer of dough around the rim of the lid to seal it nicely the wok is sealed thoroughly if during cooking you see steam escaping from anywhere seal it immediately light the flame now & keep heat on medium. cook for 5 minutes after 5 minutes reduce heat to low. keep a tawa/griddle on the burner & the wok over the tawa & cook for about 20 minutes on low heat this is dum cooking the biryani has been cooking for 20 minutes. put off heat & let the wok sit for 5 minutes as shown after 5 minutes open kadahi/wok carefully as there is steam inside loosen the lid as well & lift it carefully our chicken dum biryani is ready. we will remove it to a serving dish biryani is always removed from the side of the wok and the ladle, a large slotted spoon, is pushed all the way down & up to remove it as is done here the biryani is colorful & exudes a wonderful aroma here is our hyderabadi chicken dum biryani. the rice & the chicken are well cooked do try this dish and share your experience if you like the dish please share our video, subscribe to our channel & push the bell icon to remain informed about all our recipe video uploads. thanks for watching
