To get started I will be using one and a half pounds of boneless skinless chicken breast two boxes of cornbread stuffing mix Two 10.5 ounce cans of condensed cream of chicken soup One 12 ounce bag of frozen green beans and one 8 ounce container of sour cream now with these ingredients With an added 1/2 cup of water or broth would make an excellent chicken and stuffing casserole but I like to add fresh elements and extra flavor that I really think gives this a wonderful taste I will be adding two ears of fresh sweet corn I am going to just clean all the leaves off take all the corn silk off and remove all the kernels I’m also going to be using A 1/2 cup of bell pepper 1/2 cup of onion and 1 cup of diced celery Now in a large bowl. I am going to combine my cornbread stuffing mix my condensed cream of chicken soup I’m also going to add my sour cream my bell pepper onion and celery and give it a good mix Before I add my bell pepper onion and celery I’m going to add half of a cup of chicken broth You could also use water, but I think chicken broth adds wonderful flavor Next I will be using a 4.5 quart crock pot and I will be adding the chicken first I’m also going to be seasoning it as my first layer in the crock pot I’m going to be adding a 1/2 TSP of onion powder A 1/2 TSP of garlic powder I’m also going to be adding a 1/2 TSP of poultry seasoning and then salt and pepper to taste Next I’m going to add all of my stuffing mix Now for my last layer I am going to add my frozen green beans and fresh sweet corn a little bit of butter, salt and pepper to taste Now I am going to cover with a lid I’m going to set the Crockpot to low and allow it to cook for around five to six hours and if you want to cook it on high you can cook it for three to four It has been five and a half hours cooking on low and my chicken and stuffing casserole is done And my kitchen smells wonderful Now all that there is left to do is give this a good mix and I’m going to do it slowly because as you can see it is packed in this Crockpot and once I give it a good mix you can shred the chicken I’m just going to leave it in chunks, and then I am going to serve with a side salad This is just delicious comfort food.
