How to Make Crab Cakes : Tips for Frying Crab Cakes

Spano and I’m going to show you how to make crab cakes from my new book Not Just Desserts.
Okay as you can see this pan I think needs a little more butter so I’m just going to
add a little bit more butter to help brown the crab cakes. Now remember you don’t want
to crowd the pan to much when you are frying or sauteing because really what it ends up
doing it’s starts steaming your food instead of sauteing it or cooking it so you really
don’t want to crowd it to much because it creates a lot of moisture and it starts steaming
your food instead of frying it the way you really need to fry this. So it really don’t
take to long. So while this is browning for the mean time I’m heating up another pan because
I’m going to start the sauce and we need the pan heated up just a bit for that cause we
are going to melt some butter into that to make our crab sauce.
