Take a mixing bowl and place a strainer. Add baking powder, baking soda and maida Sieve the flour in order to mix the ingredients. Such that the air gaps will form. Take another mixing bowl and break the eggs. Beat the egg mixture using a beater. Beat it until foamy due to which the cake will be spongy. Then take another mixing bowl and add soft butter. Use soft butter such that it will be easy to mix. If using melted butter then it will be easy to beat the mixture. Using a spoon beat the butter Grind the sugar to a fine powder Then add sugar powder to the butter Mix it well until you get the creamy texture. Mix it well by adding egg mixture gradually. Mix it well and make sure that no lumps are formed. Mix it with a beater. Mix it well using a beater/ electronic whisker Without using any instrument beat the mixture using a whisker/ spoon. Mix it well until combined and foamy. Now add baking powder mixture gradually and mix it well. Add the flour slowly and mix it well. After addition of maida don’t do over mixing and make sure that no lumps are formed. Mix it lightly otherwise, it collapses the air gaps and spoils the cake. To get spongy cake don’t do over mixing. Then add vanilla essence which gives a nice flavor. You can add any desired essence. Mix it well Now the cake batter is ready. Switch on the stove and heat a pressure cooker. Add butter and spread the butter around the cooker. Such that it will be easy to remove the cake. Now take a glass of water and place it in the middle of the cooker. Now pour the batter around the glass as shown in the video clipping. Spread the batter evenly and close the cooker by removing the gasket and whistle. Bake the cake in high flame for 2 minutes and then adjust the flame to low. After 15 minutes remove the lid and check the cake for doneness. Insert a toothpick as shown in the video clipping, it should come out cleanly otherwise bake it for some more time. Close the lid and bake the cake for 2 minutes. Then remove the lid and again insert the toothpick. Now it came out cleanly so the cake is ready. Switch off the stove and allow it to cool. Allow it to cool and them de-mould the cake. Don’t try to de-mould the cake when it is warm. Here the cake is cooked perfectly due to the pressure. After cooling invert it to a plate. Tasty and delicious sponge cake is ready now. Cut the cake into pieces and serve. Sponge cake is prepared with fewer ingredients.
