Shahi Chicken Korma~ Shahi Korma Chicken ~ শাহী চিকেন কোরমা ~ (With Eng. subtitle)


Whole Chicken cut up: 1 kg Ingredients for marination:- Yogurt: 1/2 cup Cumin powder: 1 tbsp Chili powder: 1/2 tbsp Coriander powder:1 tbsp Garam masala powder: 1/4 tbsp White pepper powder: 1 tbsp Sugar: 2 tbsp (if you take sweet curd no need to add sugar) Salt: to taste Flour: 1/2 tbsp Mixing flour with yogurt improves the thickness of the gravy & prevents disintegration of yogurt in hot oil Ingredients for cooking:- Onion paste: 1/2 cup Garlic paste: 2 tbsp Ginger paste: 2 tbsp Cashew nuts 5-6 nos sesame seeds: 1/2 tbsp We will make a paste of sesame+cashew (instead of sesame poppy seeds can be taken) Whole garam masala(cardamom-4pcs, cinnamon-2pcs-1/2 stick”, cloves-4pcs,nutmeg & mace-a small pinch each) Cumin seeds: 1 tbsp Onion : 1 big pc chopped Green chili: 5-6 nos Fried onions : 1 cup dried Milk: 1/2 cup Clarified butter/ghee: 2& 1/2 tbsp Oil: 3 tbsp Kewra water: few drops Marinate the chicken with curd whisked with flour & also add other spices one after another Add cumin powder Add coriander powder: Add chili powder Add white pepper powder Add garam masala powder Add sugar Salt Mix everything & use hand to mix it properly Prick the chicken pieces with fork so that juice of the spices mix properly within the chicken Marinate the chicken for 30 minutes Make a paste of cashew nuts + sesame seeds + fried onion (2 tbsp) Now we will start our cooking Add 3 tbsp oil in a hot pan Add clarified butter/ghee: 2 tbsp Heat the oil & ghee Add bay leaf, cloves, cumin seeds, cinnamon, cardamom, mace & nutmeg Saute for a while Add chopped onions Fry it Keep the flame in medium Korma looks whitish, so care should be taken not to fry onion too brown in color After 4 minutes the onions are almost fried Add 2 tbsp ginger paste Add 2 tbsp garlic paste Mix everything Stir till raw smell goes away Add onion paste Add salt as required but keep in mind we have mixed salt with chicken also Chop 2 green chilies in few pieces & add Mix everything & fry for few minutes We have to cover the lid frequently during frying the spices It will help frying quicker It takes 5 minutes to fry the onion.Between the time we fried the spices by covering the lid Now add cashew paste in it Mix a little amount of water to the mixing jar & and add it to the pan Stir a while Cover the lid for 2 minutes After 2 minutes stir it again Stir it till the oil from the spices separates The oil starts separating from spices after 6 minutes Now add marinated chicken in it Without adding any water we will mix the chicken and will stir it for a while The chicken will release some water in this stage Keep the flame in medium low & stir the chicken Cover the lid now Keep the flame in medium The chicken has released some water after 4 minutes Add water in the marination bowl & mix the residual spices & add that water in it Stir again & then cover it Open the lid after 10 minutes The chicken has released enough water in 10 minutes Stir thoroughly Add 1/2 cup milk now Add 1/2 cup water in this cup & add it to chicken Add two green chilies cut into pieces Spread few fried onions over it If you like you can add raisins too at this stage(we are not adding it) Stir again & mix everything & keep covered till chicken softens Time to time you must check the tenderness of the chicken & consistency of the gravy After 15 minutes we open the lid Stir it Check with a fork the tenderness of the chicken The chickens are nicely soft & a beautiful aroma also coming out Add 1/2 tbsp clarified butter/ghee now Stir to mix We switched off the flame Now Add few drops of kewra water in it Stir It`s ready now & we take it out in a bowl Garnish it with green chili slits & coriander leaves Serve it with fried rice or pulao, biryani or naan or chapati Hope you have liked the recipe Good Bye
