Slimming World roasted stuffed peppers recipe

Colourful, tasty and packed with filling rice and beans, these stuffed peppers are
full of wonderful flavours and textures. They make a great meat-free main course , or a tasty mid-week supper. Start off by cutting the peppers in half
and removing the seeds. Season and roast them in a hot oven for 10 to 12 minutes. Meanwhile, fry the onions, garlic and chilli, add the herbs, tomato puree and rice. Pour in the stock and simmer for around 10 minutes until the rice is cooked. Keep an eye on it at this stage as you may need to add more stock if it boils too quickly. Stir in beans and fill the pepper halves with the mixture. Return the peppers to the oven for another five minutes, or until the tops are lightly browned.     Quick and easy recipe 🙂 Might be better to have the ingredients at the beginning of the video rather than the end though?
