Slow Cooked Whole Chicken


Hi everyone, It’s Michele from
The Free Range Butcher again. I’m going to show you how to slow cook a whole
chicken. Its a great way to make a soup or a broth
and to get the most value out of a chicken. Now there’s several ways to make chicken stock. We see a lot of people use our frames and the chicken necks gives you a stronger flavour, you’ve also got wings you can use as well. I find using a whole chicken is better value for money as it gives you the stock and a lot of beautiful poached meat. So what I’m going to do here is I’m just quickly
putting in some chopped up celery and onion in the bottom of the slow cooker and then
I’m going to put the rosemary, lemon and garlic that I’ve got here into the cavity of the chicken. So I might put a couple of slices of lemon
into the bottom there. I’ve rinsed my chicken and just gave it a little bit of a pat dry. So I’m just putting the lemon and shoving
that rosemary into the cavity. You can put some under the skin as well if you like. I’m running out of garlic so I’ve only got
one but usually I’d probably use about 5. I’m just going to pop this into the slow cooker, breast side down. I’ve got a little small slow cooker here that
I’m using for that but its fine because I’m not doing the soup yet so I don’t need
lots of vegies in there. So the chicken is in and I’ve got all the flavourings in. I’m pouring over the top filtered water and
I’m going to leave that to slow cook for 4-6 hours and then I am going to show you what we do after that. So water in, lid on, slow cook for 4-6 hours
