Spicy Beef Noodle Soup – Flavology by Lee Kum Kee feat. Ching-He Huang


So, today I lost an old-school Hong Kong
noodle shop and I’ve heard about their amazing beef noodle soup. So let’s do
this! This is Chopsticks Kee guys. It’s a
really cool, small traditional Cantonese Macanese inspired noodle shop here in
central. They do dishes like pork chop bun, fish ball noodle soup. But what I’m here for is their beef noodle soup. This is it! The food’s arrived. This is their Beef and Fish Ball Noodle Soup. We’ve got thin noodles, fish balls, thinly sliced beef, and just lightly poached, all in a delicious beef broth and then you’ve got some
fried garlic pieces. I’m just gonna get a bit of the beef. That is really, really good. The thinnest, freshest noodles. But it’s this broth. It’s moorish. It’s umptious. It’s fresh. It’s got a light sweetness to it. With the garlic it just makes it so fragrant. There’s no spicy note to the broth just
really, really rich but also clean at the same time. This is seriously good! How amazing were those beef noodles at Chopsticks Kee. It was so full of flavour
I’m going to show you how to make my version and it couldn’t be easier.
I’ve got 2 litres of water I’m going to add in 4 cloves of crushed garlic, 3 large
slices of ginger, 3 small shallots, carrots, some tomatoes just quartered, white turnip, 2 star anise, a few pinches of salt, my organic stewing beef. Next I’m going to add the seasoning Lee Kum Kee’s Red Braising Sauce and this is going to add a delicious savoury and sweet note. A
tablespoon Lee Kum Kee’s Premium Dark Soy Sauce, Chili Garlic Sauce. Cook on a gentle
simmer for about an hour and a half until the beef is meltingly tender and
delicious! Look at that! That looks rich, umptious, delicious. It’s smells incredible. It’s time to assemble. I’ve got here some flat udon noodles, good amount, right into
the bowl. Now I want nice bits of turnip, the beef, some of those broken-down
tomatoes. Blanched baby pak choi. These just had ten seconds in hot water.
Finally a few sprigs of fresh coriander. That’s it! That’s my Spicy Beef Noodle
Soup!
