Hello Friends, Today ‘s recipe at KHANA DUMDAAR is Vegetable Biryani Let’s see the secret of this recipe. This is Tina with you first step for the preparation of vegetable biryani is vegetable marination for this, take 200 grams beaten curd in a bowl add salt to taste 1 teaspoon sugar 1 teaspoon corander leaves 1 tablespoon cumin powder 1/2 teaspoon Turmeric powder 1 teaspoon Kashmiri Red chilli powder 2 tablespoon Ginger, Garlic & Green Chilli paste this paste contain 15 garlic cloves, small amount of ginger, 4 pieces of green chilli now mix all ingredients with hand after mixing all ingredients, add vegetables I take 150 grams of cauliflower cut into small pieces 1 small capsicum, cut into square shape 150 grams of paneer cut into cubic shape 2 carrots cut into linear shape 1 medium sized potato cut into small pieces 100 grams french beans , cut into small pieces vegetables are washed & cut into pieces now add all vegetables without paneer in this mixture & mix it all and add paneer at the end & mix after marination keep it aside with a lid now in step 2 is boiling of rice sorry for inconvenience, Here add 2 tablespoons Salt in 1 litre of water …KEEP WATCHING add salt only at the time of rice no salt will be added at the time of biryani, so add salt as per your taste now add different ingredients 2 bay leaves, 8 – 9 green cardamoms 10 – 12 black peppers, 1 petals of mace add all ingredients into water after mixing all ingredients into water leave water to boil now add 1/2 lemon juice into water it will make the rice fluffy & non sticky now water start to boil now add Basmati rice here I take 3 cups long grain basmati rice rice is soaked for 1 hour into water and then drain the water now add basmati rice into boiling water it will take 7 – 8 minutes to cook rice about 80%, as it is already soaked into water for 1 hour drain water after 8 minutes, when rice is cooked almost about 80% so friends, after 8 minutes rice become fluffy and rice is cooked almost about 80% now put out hte flame & drain water from rice and spread it on a plate to avoid overcooking but friend’s there is a secret for the preparation of a perfect biryani before draining water add 1 tablespoon clarified butter and mix it gently with basmati rice this will give a beautiful flavor & a perfect biryani now drain water in the next step, add 2 tablespoons mustard oil into a different frying pan preheat oil after heating oil, add marinated vegetables into oil mix all ingredients stir vegetables for 3 – 4 minutes & fry well add 1 teaspoon biryani masala and then close the lid for 5 minutes add 1/4 cup water into same bowl used for marination of vegetables now add this water in the vegetables & mix it all now cook for 5 minutes on medium flame with lid after 5 minutes open the lid and mix all vegetables vegetables are cooked as required (almost about 80 %) rest will be cooked during dum now at step 3, finally will be cooked in a pressure cooker on high to low flame, this is called “DUM” today I will use pressure cooker for preparation of biryani Recipe of Handi biryani is already uploaded on KHANA DUMDAAR if you wish to watch, click the above link friends, preparation of vegetable biryani in a pressure cooker is very easy you can see friends, I spread rice on a plate to avoid overcooking & stickiness now add vegetables into the pressure cooker and spread vegetables into the pressure cooker now add a layer of basmati rice after adding rice, spread 1 tablespoon ghee now add fried onion here, 5 medium sized onions cut into pieces & fried in 2 tablespoons oil with small amount of sugar now add 100 grams Coriander leaves & 50 grams Mint leaves, cut into pieces now add 1 teasoon homemade biryani masala now add another layer of rice over it after spreading rice add 2 tablespoons clarified butter or ghee and rest of the fried onions now add rest of the coriander & mint leaves now add another teaspoon biryani masala now add yellow color here 7-8 saffrons & 1/4 teaspoon turmeric powder are added to 1 tablespoon rose water now add this color over the rice this will give a beautiful color & a nice aroma of saffron now 1 teaspoon keora water this optional, you can skip this step so friends, vegetable biryani is ready for DUM so let’s go for it so friends, place a iron tawa on flame and put it into high flame now palce pressure cooker on tawa now remove whistle from the lid & close it now cook it for 5 minutes on high flame & 25 minutes on low flame after 30 minutes put out the flame & open the lid so friends, vegetable biryani is ready it’s smell so good and rice of the vegetable biryani is cooked perfectly now let’s go for plating of vegetable biryani so friends, vegetable biryani is ready to serve you can serve it with “RIATA” if you like this recipe, then give it a thumbs up & share it and don’t forget to SUBSCRIBE “KHANA DUMDAAR” Thank You
